Elaboration: This wine has been made by the Domínguez family for 4 generations, using the method passed on by D. Jose Domínguez Ramos, great grandfather of the present proprietors.The traditional varieties of the region are used in its production, Listán Negro, Negramoll, Tintilla and Listán Blanco which only come from our own vineyards in the north east of Tenerife between 450 and 700 metres above sea level.
This zone is affected by the presence of the Alisios winds which, coming from the north Atlantic, load up with humidity forming the sea of clouds when they make contact with the more mountainous islands like Tenerife. This latter has its influence in the soft maturing of the grapes, achieving aromatic and fresh wines, with a very characteristic volcanic and atlantic element. Each variety and plot are picked manually and the harvests are worked upon separately. Once the fermentation is finished the blended of the different wines is carried out. These are aged for four months in oak barrels.
Tasting Notes: Garnet colored wine. The nose has spicy notes, smoked and chocolate, with ripe fruit and varietal aromas. The palate is a wide, well balanced wine, with a very pleasant and a long aftertaste.
This wine combines with: Wine suitable to combine with different dishes of cuisine, from roasted fish, especially fatty fish such as tuna or fish in sauce, to meats, as well as pasta and rice.
